At STAMER GmbH we are true pepper specialists – we trade in pepper in it’s true form piper nigrum – whole and processed.
Our product range includes:

Upon request we offer special qualities, including red, green and pink pepper as well as long pepper or gourmet peppers such as Kampot pepper – tailored to customers’ individual requirements.

Cleaning grades
We offer a comprehensive range of pepper in various cleaning grades. These range from a coarsely pre-cleaned product, suitable for extraction or grinding, to hand-picked quality for bottling in glass jars.
Cleaning steps are customisable to meet your specific needs. The purity of the final batch of pepper is determined by the following processes and technologies:
- Cleaning & Sorting
Use of magnets, sieves, screening, wind sifting, vibrating screens, laser technology, and spiral cleaning to remove foreign matter and unwanted components. - Optical Processing
Bright colour through more intensive washing (e.g., for white pepper), careful scaling, and, if desired, hand sorting. - Optimised Drying
Controlled moisture content to meet local (ASTA standard) and customer-specific requirements.

Microbiological safety – at the highest level
Food safety is our top priority. A key component of this is the reliable exclusion of salmonella and the targeted control of total plate counts (TPC). Today, sterilisation procedures to control TPC levels are integral to any food safety strategy, and we are among the companies leading the way in this field.
In 1996, we pioneered steam sterilisation in Germany, becoming the first traders to offer this innovative technology. Since then, we have continuously developed and refined this process in collaboration with specialised partners at the Port of Hamburg.
The result is a guaranteed TPC of less than 10,000 CFU/g and the reliable elimination of salmonella. For sterilisation processes, we work exclusively with GFSI-certified partner companies – for maximum food safety at the highest level.

We offer custom grinding services allowing us to supply pepper in ground and crushed form – tailored to match customer requirements.
In providing this service we work exclusively with GFSI certified partners that have been audited by our QM team prior. This commitment allows us to offer our customers the highest possible quality standards.

Organic certified quality

The increasing demand for organically produced food is a trend that has been evident in Europe for some time. This aligns closely with our company's commitment to high product quality, sustainability, and responsibility.
STAMER GmbH has been EU-ORGANIC certified since 2021. In 2023, we successfully attained NATURLAND certification. Since then, we have added products from association EU ORGANIC and NATURLAND products to our portfolio – with these certifications we have further strengthened our dedication to sustainable and rigorously controlled product quality.
We are proud to rely on a stable, long-standing network of dependable partners for our organic range. Most of our top organic suppliers have been Organic or Naturland Certified for several years. A strong trusting business relationship which is supported by regular on-site audits and strict quality controls of on our incoming goods.
EU organic certification
The EU Organic Regulation (Regulation (EU) 2018/848) sets uniform standards for organic farming and its control. These include:
- The restricted use of plant protection measures
- The restricted application of fertilisers
- Transparent traceability and regular inspections by independent control bodies both within the EU and also Worldwide

NATURLAND
NATURLAND Certification goes beyond the standards of the EU Organic Regulation, setting out clear criteria on social responsibility, fair working conditions, and sustainable management throughout the supply chain. The standard is published by Naturland e.V. – Association for Organic Agriculture.
The focus is on organic production and responsible treatment of people, animals and the environment.
